Diva: baking powder
Mensch: baking soda
I thought of this because baking powder has such a smooth, velvetty texture while baking soda is more lumpy and utilitarian. But in watching this video and learning more about the differences between the two, I see that it goes deeper than that. Baking powder can do its thing with just moisture, while baking powder needs to react with an acid. So baking powder is very self-sufficient and maybe a little smug - - baking powder needs to collaborate.
